Zucchini Appetizer

3 C. grated zucchini
1 C. buttermilk biscuit mix
1/2 C. chopped onion
1/2 C. freshly grated Parmesan cheese
2 T. chopped parsley
1/2 tsp. salt
1/2 tsp. seasoned salt
1/2 tsp. oregano
dash pepper
1/2 tsp. garlic salt

1/2 C. oil
4 lightly beaten eggs

In large bowl, combine zucchini, biscuit mix, onion, cheese, spices.

Add oil & eggs and beat thoroughly. Spread in greased 9" x 13" pan. Bake at 375° F. for 25-30 minutes. Cool, cut into 2" x 1" servings.
