Cream of Zucchini Soup
2 Tbsp. finely chopped onion
2 Tbsp. butter
2 C. chicken broth
1 tsp. curry powder
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 lbs. zucchini coarsely chopped
8 oz. sour cream
Saute onion in butter. Add broth, curry, salt & pepper. Bring to boil. Add zucchini. Cover. Reduce heat and simmer until tender. Stir in sour cream. Pour into blender (1/3 at a time). Process until smooth. Pour into bowl. Cover &. chill. |
